The Suvie appliance is a WiFi-enabled countertop multi-zone refrigerator and cooker that easily turns four individual meal components — raw proteins, fresh vegetables, dry starches, and chef-designed sauces — into one perfectly cooked, restaurant-quality meal that’s ready whenever you want it to be.
Unboxing your Suvie
Please review the unboxing instructions located on the card insert that you will find after removing the top of the box. Suvie is heavy (80 pounds), so, for safety, we recommend asking someone to help you move and lift it.
What can I cook with Suvie?
With our Suvie Smart Meals subscription service, you can customize and order fresh, wholesome meals shipped directly to your door.
You also have the freedom to create your own meals with the ingredients of your choice. If you’re looking for inspiration, we recommend our collection of My Cook Meals, which have been developed specifically for your Suvie.
Suvie cooks your meal using one of three modes: Sous Vide & Multi-Zone, Slow Cook & Starch, and Broil Only.
Sous Vide & Multi-Zone: Use this setting when you want to Sous Vide, the gourmet French cooking technique. This method requires you to use our vacuum-sealed Smart Meal proteins, or your at home vacuum sealed proteins. Place the sealed proteins in the Suvie pan, cover with water, and insert into the top right zone. Place vegetables in another Suvie pan in the top left zone, and starches in the bottom right. Set the temperature (based on your protein and preferred level of doneness) and time for your proteins, vegetables, and starches.
Slow Cook: Use this setting when you want to cook foods at a higher temperature for a longer period of time. Set the temperature (Low or High) and the time for proteins. Both of the top two zones will heat, so you don’t need to feel restricted to just one pan. You can make a large batch of chili, stew, or pot roast divided between the two zones. If you want to simultaneously cook starches in the starch zone, you can do that too. Just set the time.
Broil Only: When using the Sous Vide & Multi-Zone or Slow Cook modes, Suvie will automatically prompt you to broil once your cook has finished. Use the Broil Only mode when you wish to pre-boil proteins or vegetables before cooking. When using this cooking mode, you cannot cook starches at the same time.
How many portions does Suvie make?
Your Suvie appliance can make enough servings to feed 1-4 adults, or 2 adults and 3 children.
Getting Started with Suvie
We recommend you place your Suvie on a counter and under cabinets that can withstand moisture. For best refrigeration performance, follow the below Suvie placement guidelines:
Leave at least 1" free above appliance. Place under cabinet if it can withstand condensation.
Leave 1" free on the left side and 4" free on the right side of the appliance.
Leave at least 2" free between the appliance and the back wall (6" is optimal for cooling performance).
We recommend placing appliance near a sink to make filling & draining easy. Only plug Suvie into a GFCI (Ground Fault Circuit Interrupter) outlet.
The first time you plug in your Suvie, the control panel will guide you through an easy 5-minute setup.
Filling the Water Reservoir
The water reservoir is located on the upper righthand side of the appliance.
Before each cook, fill the reservoir with water to the fill line, approximately ¼” from its top. NEVER fill the reservoir with anything other than water.
The reservoir can be removed for filling. If removed, please be sure to push the reservoir down firmly to ensure it is properly in place; then refix the lid on top.
NOTICE: Never remove the reservoir or add more water during cooking or cooling. Suvie will detect reservoir removal and automatically pause its current cooking or cooling state.
CAUTION: The reservoir will steam and become hot during cooking. You should not touch the reservoir at this time.
Emptying the Drain Tray
The drain tray is located in the lower front of the appliance and is dishwasher safe.
Before each cook: Pull out the drain tray and discard its contents into the nearest sink; then replace the drain tray completely into the appliance. For convenience, handles are located on either side of the drain tray.
NOTICE: The drain tray must be present to cook a meal. Never remove the drain tray while cooking. Suvie will detect if it has been removed and will automatically pause its current cooking state.
CAUTION: The drain tray will be hot after each cook. Please allow time for it to cool before handling.
The top-left zone can be used to steam, slow cook, and broil. When a cook is scheduled, this zone refrigerates using water-based cooling. Raw vegetables or food being slow cooked should go in this zone.
The top-right zone can be used to sous vide, slow cook, and broil. When a cook is scheduled, this zone refrigerates using water-based cooling. All proteins must be cooked in this zone. If using the sous vide method, proteins must be vacuum-sealed and covered with water, as water is not automatically added in this zone.
The bottom-left zone is used for warming, which is perfect for sauces. This zone is NOT refrigerated. Please only use properly packaged shelf-stable sauces, like those that come with Suvie Smart Meals, to avoid spoilage.
The bottom-right zone is used for boiling; we recommend cooking starches here, such as quinoa or pasta. Water is automatically transferred at just the right time in the cook cycle and automatically drained for ideal texture results. When loading starches, do not fill past the fill line indicated and DO NOT add water. Be sure to add salt to taste.
The two identical trays are used for either vegetables, proteins, or for anything that will be slow cooked.
The larger pan with a high-wall is used for storing any sauces or garnishes that will be warmed during cooking (and that do not need to be refrigerated).
The square pan is the strainer that will be used for starches, and it is inserted into the starch tray. Note: there is a front and back direction labeled on the starch tray; make sure to place this tray in Suvie with the word ‘FRONT’ facing out.
Filling the Starch Pan
Step 1: Place strainer into the starch pan
Step 2: Pour starch into the strainer
Important: Do not fill past the fill line indicated on the inside of the strainer.
Step 3: Add salt. For reference, the starch pan is 1.5 L, so we recommend 1 Tbsp to salt the water.
Step 4: Insert the starch pan in the lower-right cooking zone with the label FRONT facing outward.
Suvie uses a water-based cooling method with a mini compressor (similar to that of your household refrigerator) to keep your protein and vegetables cold until they are ready to be cooked. Suvie is designed to keep your food under 41F. For best refrigeration performance please make sure to follow our counter-top placement guidelines above.
Having Suvie refrigerate your vegetables and proteins allows you the convenience of being able to load your Suvie with ingredients -- either in the morning before work or in the evening before bed -- and have a perfectly cooked meal ready when you want it.
NOTICE: Only the top-two vegetable and protein zones are refrigerated. Be sure to only store shelf-stable items that DO NOT need to be refrigerated in the lower zones.
Sous Vide & Multi-Zone
Sous vide is the process of vacuum-sealing food then cooking it to a very precise temperature in a water bath; in French, sous vide means “under vacuum.” The beauty of sous vide is that it allows you to precisely cook food to your preferred level of doneness every time.
Sous Vide & Multi-Zone Cooking Instructions
Before each cook, fill the reservoir with water until the water level sensor is 1/4 inch from the top of the reservoir.
Insert the empty drain tray into the lower-front of the appliance
Place seasoned protein into a vacuum-sealed bag, then place in the protein pan
Fill protein pan with water until the protein is completely covered
Insert protein pan into the top-right protein zone
Load remaining food components into Suvie (vegetable, starch, and sauce)
Select the My Cook option from the settings menu
Enter the appropriate cooking temperature and time for desired doneness. NOTE: If using Suvie Smart Meals, these cooking times will be entered for you
Enter the appropriate cooking times for your vegetables and starch
Select either: Cook Now, Refrigerate, or Schedule to begin
Once cooking has completed, you can broil the vegetables and proteins to enhance their flavor and appearance — see steps below:
Carefully remove protein from the bag and pat them dry with a paper towel
Wipe the pan dry with a paper towel
Place your protein back into the pan and insert the pan back into the Suvie appliance
Season vegetables with salt and pepper to taste, and if desired, drizzle with olive oil
Insert the vegetable pan back into Suvie appliance; close door
Select the Broil option from the menu and adjust the broil time as desired
Once the cook has completed, select Done from the menu to end the cook
Enjoy your perfectly cooked meal made by Suvie.
Your Suvie can also be used to cook your favorite slow cook meals, such as soups, brisket, or chili.
